Breakfast Cookie

This is literally all you need to power start your day and loaded with everything “breakfast”. I made these cookies with backcountry skiing in mind. I wanted to make something that had it all in one bite and can be complimented with my cup of joe. I am typically not a morning person so I needed something quick and healthy. They are very quick to make and I know you will enjoy them.


Ingredients:

1 banana

1 egg (or chia egg)

1/4 cup maple syrup -or- honey

1/2 tsp kosher salt

1/2 tsp cinnamon

1 tsp vanilla

1/4 cup single ingredient nut butter

1/4 cup oat flour (or other flour: whole wheat, almond, coconut etc.

1 cup old fashioned oats

3/4 cup mixed nuts (almond, sunflower, pecans etc)

3/4 cup dried fruit

1/4 cup chia seeds

1/4 cup dark chocolate


Instructions:

  1. Preheat the oven to 350 F and line a cookie sheet with parchment paper.

  2. In a a bowl or stand up mixer, mix together the banana, egg, maple syrup, salt, cinnamon and nut butter. Be sure to combine this well, until it is a nice creamy mixture.

  3. Fold in the flour until combined. Then add in the oats, nuts dried fruit, and chocolate until well distributed.

  4. With a large cookie scoop or about 1/4 cup scoop the mixture onto the parchment lined cookie sheet. Slightly press the cookie down (it will not spread once baked).

  5. Cook for 20 minutes or until slightly golden brown.

  6. Store in an air tight container for up to 5 days.
