Tomato Poached Cod with Chili Oil

The sound of making poached fish sounds difficult, but this recipe is simple and easy to put together. With minimal ingredients you can create an elegant and healthy dish at home.


Ingredients:

1/3 cup olive oil

4-5 cloves garlic, roughly chopped

1 shallot, sliced

2-3 tsp chili flakes

Cherry tomatoes (preferable on the vine)

Chopped basil or other fresh herbs

Fish sauce (few dashes)

Water ~just enough to slightly cover tomatoes

Salt and pepper

Black Cod (or any white fish)


Instructions

  1. Pat the fish dry and add salt and pepper. Let it sit for about an hour.

  2. In a hot 9” cast iron add the olive oil and cook until glistening. Then fry the garlic, shallots and chili flakes. Once golden remove the garlic, shallots and chili flakes from pan and set it aside. Be sure to remove them just before they are cooked to perfection. They will continue to cook.

  3. Reserving some olive oil in the pan add the cherry tomatoes, herbs and a pinch of salt and pepper to the cast iron. Cook for 5-8 minutes, until some are popped and tomatoes are slightly jammy. Add in a few dashes of fish sauce. Taste and add salt and pepper to taste. Slightly cover the tomatoes with water and cook until boiling.

  4. Settle the fish into the pan and cover for about 4 minutes or until the fish is flaky and cooked through.

  5. Serve on top of ancient grains, spoon the fried garlic and shallots on top, drizzle the chili oil all over and serve with lime and parsley.
