Bright Sesame Salad

This Bright Sesame Salad is a delicious asian inspired dish that goes well with any protein you decide to top it off with. Some of my favorites are rotisserie chicken or salmon patties topped with sweet chili sauce. This salad keeps really well in the refrigerator for a couple days, so it makes a great meal prep item. I often offer this as a lunch option for our helicopter fly out trips at Redoubt Mountain Lodge. I suggest doubling the dressing recipe to keep for later.

Ingredients

Salad: 

4 cups romaine lettuce

1/2 red cabbage

1/2 green cabbage

1 cup grated carrots

1 cup cilantro 

1/2 cup green onions

1/2 cup slivered almonds

1 can manderin oranges, drained -or- thinly sliced oranges.

1 package dried ramen noodles 

Dressing: 

3 tbsp soy sauce

3 tbsp rice vinegar or apple cider vinegar

1 tbsp neutral oil

2 tsp sugar 

2 tsp fresh grated ginger

1 garlic clove grated

1/2 tsp black pepper

1/4 tsp cayenne 

Instructions

1. In a mason jar or small bowl, combine all the dressing ingredients. Whisk or shake the mason jar vigorously. 

2. Let the dressing sit in the refrigerator for at least 30 mins. 

3. Heat up a pan on medium high heat and toast the crushed up ramen noodles. Set aside. 

 In a large bowl combine all the salad ingredients and pour in the dressing. 

4. Serve with shredded cheddar cheese, a dollop of sour cream and hot sauce.

I usually toss the salad with chicken to make Chinese chicken salad, or top with salmon patties drizzeled with sweet chilli sauce. 

If you are feeling extra hungry, wrap it all in a large flour tortilla.
