Spinach and Bacon Quiche

Quiche is an elegant egg dish, but also very convenient to have prepped for busy mornings. This quiche recipe is another template for you to get creative or use whatever ingredients you desire.

1/4 cup chopped onions

chopped spinach

1/2 cup gruyere cheese

1/8 tsp Salt

1/4 pepper

Ingredients:

1 frozen pie shell

1/2½ cup mayo

1/2 cup milk 

4 eggs

1/4 cup bacon 


Instructions:

1. Preheat the oven to 400 F. Using a fork poke your pie shell all over. 

2. Place the pie shell in the oven and cook for about 10 minutes. If the pie bubbles up, simply poke it with a fork and let the steam escape. 

3. While the pie shell is baking mix together your filling. Add the mayo, milk and eggs in a small bowl and mix until combined. 

4. Heat up a skillet on medium heat and cook the bacon and onions until completely cooked. Add a handful of chopped spinach and turn down the heat. Let cool.

5. Combine the egg mixture, bacon, onions and spinach together. Pour into the pie shell. 

6. Line a baking sheet with foil and place the quiche in the middle. Then cover the pie loosely with foil. 

7. Bake for 30-45 mins or until the quiche is set. Take off the foil and bake for another 10 mins. 

8. Serve with a dollop of sour cream, salsa and hot sauce. 

Notes:

Make it your own. Feel free to personalize your quiche with whatever ingredients your heart desires. Other add in ideas are: ham, smoked salmon, bell peppers, kale, cheddar cheese etc.
