No Bake Cookies

The combination between oats, peanut butter and chocolate speaks for itself. These no bake cookies are gluten free and can easily be made vegan as well. I often make these at Redoubt Mountain Lodge when it is to hot to turn my oven on and they are a hit every time. Makes about 30 cookies

Ingredients:

3 cup granulated sugar 

1 cup milk

1 cup butter

1/4¼cup cocoa powder

2 tsp vanilla

1 cup creamy peanut butter

6 cups oats


Instructions:

1. In a large pot or sauce pan melt down the butter and whisk in sugar, milk and cocoa powder. Bring to a boil. Make sure the sugar is completely dissolved.  

2. Turn heat off and add in vanilla and peanut butter and whisk until combined. 

3. Fold in oats. 

4. Use an cookies scoop and place onto a baking sheet lined with parchment paper and transfer to the refrigerator. Let cool for 2-3 hours or until set. 

5. Place in ziplock bag and freeze or refrigerate. 

Vegan Variation: Substitute butter for coconut oil and milk for oat milk or your favorite milk substitute.
